Red Velvet Ice Cream Cake | 7 Easy Steps
For the Ice Cream Layer and Toppings:
5 cups of vanilla ice cream
Red Velvet Cake:
3/4 cup of softened, unsalted butter
1 1/2 cups of whole buttermilk
1 1/2 cups of granulated sugar
3 tablespoons of red liquid food coloring
1 tablespoon of vanilla extract
2 3/4 cups of all-purpose flour
1/3 cup of unsweetened cocoa
2 teaspoons of baking powder
1/2 teaspoon of baking soda
3 large eggs
1/4 teaspoon of salt
1 1/2 cups of heavy cream
1 teaspoon of unflavored gelatin
3 tablespoons of powdered sugar
1/4 teaspoon of vanilla extract
1 1/2 tablespoons of cold water
Kitchen Tools needed:
Step 1: Mix in the Cake Ingredients
Mix the flour, baking soda, baking powder, cocoa powder, and salt.
Reminder: Make sure to preheat your oven to 350 °F and place parchment papers in the 9-inch baking pans. Spray the pans with a non-stick cooking spray.
Step 2: Prepare the Red Velvet Mixture
Beat the butter and sugar until you achieve a fluffy consistency. Continue this process while slowly adding one egg at a time, beating until blended. Then, carefully incorporate the granulated sugar, also beating until blended.
After that, slowly add the dry ingredients and food coloring to the mixture and mix all the ingredients thoroughly.

Step 3: Bake the Cake
Fill in the two muffin cups and divide the remaining batter into the two baking pans. Bake for about 25 minutes or until when an inserted toothpick comes out with moist crumbs.
Take the cake out of the oven and let it cool for about 10 minutes.
Step 4: Make the Ice Cream Layer
Beat the ice cream at medium speed until softened. Cut the cupcakes into 1/4 inch cubes and gently place them into the ice cream. Next, spread the ice cream into the pan and place it in the freezer for at least 3 hours or overnight.
Step 5: Frosting Time
In a microwavable bowl, pour in water and sprinkle it gelatin. Let it stay for five minutes. After that, place your red velvet ice cream cake mixture in the microwave and set it on high for about 10 seconds or until the mixture is smooth.
Step 6: Mix All the Frosting Ingredients
Mix the heavy cream, powdered sugar, and vanilla extract. Subsequently, set the mixer at medium-high until soft peaks are achieved.
Gradually incorporate the gelatin while the mixer is on low. After that, put it at high speed and beat until stiff peaks form.
Step 7: Assemble the Red Velvet Ice Cream Cake
You can opt to level the cake to avoid being imbalanced. Place one layer of the cake in a cake stand and on top spread one layer of the cream cheese ice cream. Repeat this process until you’ve placed the last layer of the cake.
Frost the cake and sprinkle fresh blueberries, strawberries, or any of your desired cake toppings. Freeze the cake and voila! You got yourself a delightful dessert!
